Equal parts Chardonnay and Pinot Noir, from the Coteaux Sézannais' five villages: Sézanne, Barbonne-Fayel, Chantemerle, Bethon and Montgenost. The wine has been vilified in stainless steel. Composition: 70-80% is the vintage wine, 20-30% are perpetual reserve wines, aged in large oak vats and stainless steel tanks. The wines have completed malolactic fermentation and have been aged for a minimum of 15 months in the cellar. Dosage: 3 gr/l.

Champagne Pertois-Moriset, Le Mesnil-sur-Oger (Grand Cru). The estate, a Récoltant-Manipulant ('grower'), is a family run business from the famous village of Le Mesnil-sur-Oger, founded in 1951. Their first bottles are from 1959 and the various family members have consistently owned and operated the estate, currently by Vincent and his wife, Cecile Bauchet. they work exclusively with Chardonnay and Pinot Noir from 35 hectares from four terroirs, about half in the Côte des Blanc region. they offer well-priced wines that are made with care and represent the very best Champagne has to offer.
